Asian Pickled Cucumbers and Onions
1kg Ausfresh Mini Cues or Ausfresh Curly Cues
1 spanish onion
150g cooking salt
800g caster sugar
1 tablespoon coriander seeds
1 tablespoon turmeric powder
2 tablespoons yellow mustard seeds
Finely slice the onion. Slice the cucumbers into 2mm rounds.
Place the sliced cucumbers and onion into a large bowl and pour over the cooking salt. Mix the salt through the cucumbers and let them sit in the salt for an hour.
Rinse the cucumbers and onion well under cold water.
Bring the vinegar, sugar, coriander seeds, turmeric powder and yellow mustard seeds to the boil. Pour the hot mixture over then cucumbers and onion and leave to cool.
Transfer to a sterilised jar and store in the fridge.
